Serves 2:

Grate the cauliflower either by hand or with a food processor and set aside. Heat the vegetable or groundnut oil in a wok over high heat and add the chopped shallots and chopped garlics. After a minute, add 1/2 tsp of turmeric, 1/2 tsp ground cumin, 1/2 tsp ground ginger and a pinch of salt. Then add the frozen peas and your favorite nasi veggies (you can buy it pre-packed at your local supermarket). Add the cauliflower and stir until it’s all been incorporated. Then whisk the eggs and season with salt & pepper, make a whole in the middle of the wok and pour the egg mixture in. When the egg starts to cook at the bottom, stir in the rest of the liquid egg mixture into the nasi. Season with soy sauce and ketjap manis, to taste. For some extra bite you can also add some chicken, broccoli or tofu. Serve with crispy fried onions on top and some (homemade) peanut sauce and cassava chips on the side . Enjoy!
